Chad Hughes – Head Chef
His philosophy on food is simple – it should look good but taste even better. Source the best quality ingredients and have respect for them. Pair them with creative flavour combinations which balance and that are in season. It is this philosophy at the heart of his cooking and our aim at The Kinmel Arms that provides great food, great service and attention to detail and creates an experience that is just for you.
We are passionate about what we do! On occasions we struggle to source specific ingredients for a dish so that’s when Chad ropes in his wife, Susan, to grow them for us in our very own kitchen garden!
What Chad did before The Kinmel Arms.
At the late age of 30, passion for food led him to leave the safe and familiar world of the banking sector and start at the very bottom of the ladder in the catering world as a lowly kitchen porter.
Since then he has raced through the ranks due to hard work, determination and willingness to learn. In what feels like a very short 7 years, Chad worked and trained in Michelin and AA rosette kitchens around the country – Simon Radley at the Chester Grosvenor, Thornton Hall, Fraiche and Le Champignon Sauvage.
What we do know is he is partial to a glass of Leffe at the end of a Saturday service!
